Baked Sweet Potato Chips


Ingredients:
1 large sweet potato
Vegetable cooking spray
1/4 teaspoon salt

Peel the sweet potato and slice crosswise into 1/8 inch slices using a very sharp knife or mandoline.
Spray two baking sheet with vegetable cooking spray.
Arrange the sweet potato slices on the baking sheets in a single layer.
Spray the sweet potato slices on the baking sheets with more vegetable cooking spray.

Bake at 325 degrees for 20 - 30 minutes, 
turning the chips and rearranging the pans after about 15 minutes.

Remove the chips from the baking sheets.
Place on paper towel.
Sprinkle with salt.

Serve or store in an airtight container when cool.
